Meal prep breakfast just got a little sweeter with these Cranberry Bliss Oatmeal Cups that start your morning off with a bang in under 30 minutes! Taking a spin from Starbucks Cranberry Bliss Bars, these oatmeal cups can officially be classified as a close copycat in taste!
We love the flavors of Cranberry Bliss! We fully blame Starbucks for that. You can recreate it without much effort once we know the tricks! Cranberry Bliss Oatmeal Cups are not only delicious but also a huge timesaver! We all need that during the holidays! Why not make a breakfast that you can whip up in just a few minutes and be ready for the entire week of “grab and go” morning meals?
Why These Work
Timesavers – We all love things that save us a spare few minutes when time is tight during the holidays and meal prepping is one of the things that save us. These oatmeal cups are just spinning the concept from our Mixed Berry Oatmeal Cups where we make them in five minutes, bake them in 20 minutes and then we have breakfast for the week done.
Freezer Friendly – Not only are they quick to make but you can make 2-3 batches at a time and then freeze them for the time between Thanksgiving and Christmas. Grab a couple out of the freezer at a time and then zap them through the microwave. If you are new to freezing, make sure to check on the Freezer Tips and Storage Printable to guide you to how long items will last in the freezer.
Taste of Starbucks Without Spending the Money – We all love Starbucks sweet treats and the Bliss Bars are no different! But now you can have a sweet (almost healthy) breakfast that tastes the same without going out and spending the $3! Score!!
👩🍳 Ingredients
All you will need is nine ingredients, and you can sink your teeth into one of these incredible oatmeal cups. Here are the main ingredients you will be needed:
Old Fashioned Oats: You will get tons of nutrients from the oats, and they will help keep you satisfied and full. They have zinc, magnesium, copper, iron, and manganese.
Honey: These oatmeal cups are sweetened with honey, but you can also use maple syrup in its place. So delicious and the perfect complement to the other ingredients.
Craisins: The real star of this show is the dried cranberries. I can’t get enough of them on their own, but adding them to these oatmeal cups is a game-changer.
📎 Instructions
The best part of making these (besides the yummy flavor!) is that they only take a few minutes to prepare. You can have them in the oven in under ten minutes. If you use the meal prep ideas below, that time can be brought down to under five minutes! Check your pantry right now and see how many of these ingredients you already have on hand. You’ll be surprised to find you probably have most of them.
Step One: Preheat the oven to 350 degrees and line the muffin tins with liners or spray. Both options work.
Step Two: Combine the oats, baking powder and salt into a bowl and mix. Make sure that you use old fashioned oats and not quick oats. The quick oats are smaller and will not cook correctly for this recipe.
Step Three: Stir honey, eggs, milk and melted butter in the oats mixture. Mix well. Add the lemon and orange zest.
Step Four: Add the Craisins (dried cranberries) and white chocolate chips and mix well. Use your hands or a wooden spoon to stir.
Step Five: Using a scoop to divide the mixture into 12 muffin tin cups.
Step Six: Cook for 25 minutes and the muffins should be toasty brown. Use a toothpick to make sure they are done as all ovens are different.
Step Seven: Once cooled, melt a ½ cup of white chocolate chips in the microwave for 30 seconds. Stir and if needed, microwave for additional 10 seconds until melted. Pour the chocolate into a zip lock bag and snip the corner of the bag to lightly drizzle over the oatmeal cups. Sprinkle a few Craisins over the top while the chocolate is still wet.
These can be refrigerated for 5 days.
❄️ Freezer Friendly
These muffins can be frozen for three months. Take out the muffins the night before you want to eat them and warm them up in the microwave for 15-20 seconds.
If you are going to freeze these, place them on a sheet pan and put them in the freezer overnight. Then place them in a gallon zip lock bag. You can, alternatively, freeze them in individual bags but I would still suggest flash freezing them like I just mentioned so they don’t stick to the sides of the bag.
🥣 Meal Prep
These are a great recipe to meal prep! I know I sound like a broken record, but I really like to meal prep every opportunity I can and I feel like I’m on a mission to have others tag along:
- Measure out all the dry ingredients and put in a bowl and cover
- Measure out all the remaining ingredients and cover overnight
- Zest the lemon and orange and put in container overnight, covered
- Lay out the muffin pan and liners, if you are using them
Just taking these couple of quick steps, you’ll save time and can move on to other projects of the day!
📌 Expert Tips
Although we love to give full meal prep instructions, this is one that will not work if you try to mix all the wet and dry ingredients early, like you would for overnight oats. Just follow the meal prep instructions above by getting everything ready early and then it’s a simple dump and go.
Stick with the dried cranberries. Fresh cranberries are sour and you would need to start adding sugar. It’s just easier to use the bagged dried cranberries.
You’ll notice in the photos that I do not use muffin paper liners. You really don’t have to if you spray your muffin pan. If you want to use paper liners or the silicone ones, it’s great.
FAQ
No, please don’t. Quick oats are made up of partial, ground oats (look at them) and they will not cook the same. They will soak up a lot more moisture and you won’t get the same texture/moisture level that you will with the old fashioned oats.
Nope! Steel cut oat are smaller pieced oats that are coarse and not flat like old fashioned oats and absorb much less moisture.
