If you really want to start Cinco de Mayo early, you can start off the celebrations for breakfast and serve the Salsa Egg Cups. This is a fun spin on baked egg cups. They can be made ahead of time, so you can wake up on May 5, pop one in the microwave for a minute or you can prep them for the week ahead and celebrate all week long!

Black Bean and Corn Salsa
If you want to start off the day with a twist, try this Black Bean and Corn Salsa for a great Cinco de Mayo recipe! I love beans and chips, so this is always a big favorite of mine! It’s mild and a nice side dish if you are sharing with friends and you aren’t sure how much heat they like.
Fresh and Easy Blender Guacamole
Oh! I love this blender guacamole recipe so much! Plus, I love how fast it comes together and the clean up is a breeze!! As long as you have ripe avocados, you can make this up in under 10 minutes. Serve it with chips or on top of any of the Mexican dishes listed here! You won’t be tempted to buy guacamole at the store again when it is this easy to make at home.

Taco Stuffed Sweet Potatoes
These Black Bean Taco Stuffed Sweet Potatoes are so good, you guys, and so easy! If you can bake potatoes and throw on toppings, you can make this. I’m not going to lie and make this sound like it is more than that! This is easy, peasy and so hands off so you can keep eating your chips and salsa. Which one did you choose?
Mexican Stuffed Peppers
What a fun option if you want a purely vegetarian option. This Mexican Stuffed Pepper recipe is so tasty, and I love how it is meatless, but you really don’t miss anything! There are so many flavors going on with this one that you will love it! Add olives, top with strips of lettuce, sliced green onions, sliced jalapenos. You get the idea here.
Salsa Chicken is a great hands-off recipe that you can pop in the crock pot early in the morning and have a hot Mexican meal that evening. Eating it by itself is excellent, but you can also toss this mix into a burrito bowl, roll up into enchiladas or tostadas or into oven roasted taquitos.
Slow Cooker Burrito Bowl
This slow cooker burrito bowl is the “grown-up” version of the Salsa Chicken, or at least that is how we think about it in our house. Adding the garlic and extra spices complement the rich flavors of the salsa. Yum!
Taco Stuffed Avocado
I used the chicken from either the Slow Cooker Burrito Bowl or the Salsa Chicken, to make the quickest meal, a Taco Stuffed Avocado! Cut and pit an avocado, add the chicken and toppings and you are ready to sit down to a very healthy dinner.
This avocado dressing can be used on any of the above recipes and it is to-die-for! We use it all the time and it is a true “lick the spoon” recipe!
