Savory Oatmeal with Egg

This savory oatmeal packs a punch with protein, vitamins and minerals to start your day off with a bang! This is a great weeknight dinner or Sunday brunch as it fills you up for hours!

Ingredients

  • 2 cups steel cut oats
  • 4 cups water
  • 1 tsp salt
  • 1 red bell pepper chopped
  • 1 onion chopped
  • 1 can Ranch style beans rinsed
  • everything bagel seasoning
  • 2 tbsp butter divided
  • 12 slices bacon cooked (see instructions)
  • 4 eggs fried
  • 8 tbsp Colby cheese

Instructions

  • Start off by cooking the bacon in the microwave or on the stove top. Chop the onions and the red peppers and set aside.
  • Add one tablespoon of butter to non stick skillet and heat up on medium high heat. Add onions, peppers and beans. Sprinkle Everything Bagel seasoning on top and stir. Cook until onions start to carmelize. This should take 7-9 minutes. Remove from pan.
  • Place the oats and water in a microwave safe bowl and cook according to package instructions.
  • In the same non stick skillet that you cooked the onion mixture, melt the second tablespoon of butter. Carefully break the eggs into the pan and cook about 7 minutes or until done. If you like your eggs over easy, flip them with the pancake spatula and cook additional 1-2 minutes.
  • Add 1/4 of the oatmeal to each bowl. Top with the egg. Add 1/4 of the onion mixture and cheese to each bowl. Divide bacon to each bowl and serve.
