Prep Time 10minutes
Cook Time 25minutes
2delicata squash cut in half, sliced and seeds removed
2tbsp olive oil
2tbsp balsamic vinegar
2 tbsp honey
Preheat oven to 450 degrees.
Slice the delicata squash in half and remove the seeds using a spoon. They simply scrape right out. Slice them in 3/4 inch pieces
In a bowl, combine the olive oil, honey and balsamic vinegar. Put the delicata squash in a bowl with the olive oil mixture and combine with your hands.
Once fully combined, spread out on a sheet pan and roast for 20 minutes, flip them over and roast another 5 minutes.
When roasting vegetables, make sure that your oven temperature is correct. If it is off and cooking at a lower temperature, it can almost steam instead of roast. My oven currently cooks 30 degrees UNDER the amount and I adjust accordingly.
