Sheet Pan Roasted Delicata Squash Rings

Delicata squash reigns as the squash to beat! This delicious squash that tastes like butternut squash without all the work of cutting or peeling it! The dish creates an easy side dish for weeknights in a hurry or a gorgeous side for friends over Saturday night.

Ingredients

  • 2 delicata squash cut in half, sliced and seeds removed
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey

Instructions

  • Preheat oven to 450 degrees.
  • Slice the delicata squash in half and remove the seeds using a spoon. They simply scrape right out. Slice them in 3/4 inch pieces
  • In a bowl, combine the olive oil, honey and balsamic vinegar. Put the delicata squash in a bowl with the olive oil mixture and combine with your hands.
  • Once fully combined, spread out on a sheet pan and roast for 20 minutes, flip them over and roast another 5 minutes.

Notes

When roasting vegetables, make sure that your oven temperature is correct. If it is off and cooking at a lower temperature, it can almost steam instead of roast. My oven currently cooks 30 degrees UNDER the amount and I adjust accordingly.
