Beef and Kale Soup Recipe
Quick and healthy soup that feels hearty on a cold day. Perfect for a quick dinner or a packed lunch.
- 3 tbsp Olive Oil 1 tbsp for pan, 2 tbsp. reserved
- 1 Onion chopped
- 3 Cloves Garlic minced
- 1 lb. Ground Beef cooked
- 10 oz. Kale bag of precut
- 64 oz Beef Broth
- lime juice of one lime
- ½ Cup Cilantro chopped
- 1 tsp. Onion Powder
- Salt and Pepper to taste
Heat up a large pan on medium-high heat and add 1 tbsp. olive oil. Add chopped onion, sprinkle with salt, and sauté for three minutes. Add garlic. Sauté for an additional 2 minutes.
Stir in cooked ground beef, stir in broth. Add kale, cover for 5 minutes while kale wilts slightly.
Stir in cilantro, lime juice, 2 tbsp. olive oil, onion powder, season to taste with salt and pepper. Bring to boil, then reduce to simmer for 5 minutes. Serve warm.
