Ingredients

  • 2 15 oz. Cans Black Beans undrained
  • 1 tbsp. Olive Oil extra virgin
  • 1 Medium Yellow Onion chopped
  • 1 Green Bell Pepper chopped
  • 2 tbsp. Minced Garlic
  • 1/2 tbsp. Dried Oregano
  • 1/4 tsp. Crushed Red Pepper Flakes
  • 1 tsp. Smoked Paprika
  • 2 cups Vegetable Broth
  • Salt and Pepper to taste
  • 2 Bay Leaves

Instructions

  • Add all ingredients to slow cooker. Mix well. Cover. Cook on high for 2 to 2.5 hours.
  • Remove bay leaves. Use an immersion blender to blend soup to desired consistency. Mix well. Serve over rice with sour cream, if desired.
