A Meal Prepper's Delight! It takes just a few minutes to put together this elegant and healthy taco stuffed avocado dish. It will be one of your family's favorites! {WW 8 Purple, 8 Blue, 9 Green, Keto, Gluten Free}
Place the chicken into the slow cooker and pour a jar of salsa on top of it. Sprinkle the seasoning and garlic on top and close the lid. Cook on low for eight hours or on high for four hours.
Remove the chicken from the slow cooker and shred it using two forks. It will virtually fall apart and the actual shredding time is minimal.
Fill the Avocados
Cut an avocado in half and remove the pit. Fill each avocado with ¼ cup of the shredded chicken from the slow cooker.
Top with cheese, olives, jalapeño peppers, cherry tomatoes and sour cream. Serve.
Notes
Meal Prep: This is a fantastic dish for meal prep. All of the fresh veggies can be cut ahead of time and placed into meal prep containers for when you need them. Substitutions: Swap the cheese for any variety you like, or omit it completely for dairy-free. Chicken: Use any leftover chicken you like. I would rather you get the concept of using leftover chicken for great 2nd meals than anything else.
