Using the pancake recipe of your choice, make individual pancakes about the size of 50 cent pieces. You will need a couple for each Santa.
Slice a bit off the fat end of the strawberry to lie flat for Santa's hat.
Slice pieces of strawberries for the Santa belly section.
Use a rolling pin to flatten a large marshmallow. Gently roll back and forth across the marshmallow to blow the air out and flatten it down. This becomes the white section of your Santa suit.
Assembling the Adorable Santa Pancake Skewers
Use a small skewer (we did in the photo) start and layer a pancake, a sliced strawberry, a large marshmallow, pancake, sliced strawberry, large marshmallow, pancake and full strawberry. Top with a mini marshmallow for the top of Santa's hat. Sprinkle with powdered sugar. Serve with melted butter, whipped cream, maple syrup or on its own.
Nutritional facts can't be given as the pancake mix used by each person is unknown. Don't substitute with Marshmallow Fluff as it melts and gets sticky/messy. Meal Prep Options: Since these are served at room temperature, prepare and serve these at a leisurely pace! Make the pancakes ahead of time and even freeze them as I have shown in How to Freeze Pancakes so you can get ahead of the game for the holidays. Cut up the strawberries the night before so they are ready as well.
Another time saver is just getting everything out and ready to go in the morning. If you don’t want to make your pancakes ahead, that is fine. Just prep everything so you can dump in the bowl, stir and start cooking!
