Cut the carrots up into thin strips the size of french fries. Spray lightly with olive oil and put them in the Air Fryer for 10 minutes. Turn them over half way through. Check them at 10 minutes to see if you want to add 1-2 more minutes.
Melt butter and add minced garlic and parsley. Stir and allow to rest while waiting on the carrots to finish cooking.
Remove carrots from Air Fryer and place in a bowl. Pour butter mixture over the top and stir. Enjoy
This recipe is extremely versatile! Add more carrots and cook them in batches. Add or reduce the garlic as well. This version is definitely for garlic lovers!Adjust the 1:1 ratio of butter to garlic to your liking. Aim to slice your carrots in similar size that way they cook evenly. Meal Prep: Cut up the carrots and store them in the refrigerator until you are ready to use them. Prep the butter, garlic, and parsley the night before so you simply grab the cup and microwave. There is no need to mince or prepare these while you are cooking. It is so much better to prep them ahead of time. Just grab them and melt. Variations: Replace the garlic with your favorite herb mixture like rosemary and thyme. Ours is growing well in the garden and we cut off some fresh sprigs to add to the carrots. Toss carrots with a little balsamic vinegar. This adds an amazing tangy flavor. Drizzle a little warm honey over the carrots in place of the butter. Using Baby Carrots: Replace with the small baby carrots (the ones we all love in the bag) is fine but usually have a higher water content, so it may take a little extra time to cook.
