Shred the meat from a whole rotisseries chicken and place in a bowl. Chop the onion.
In a medium sauce pan, heat the enchilada sauce on medium high heat. Add the brown sugar and heat well. Bring it to a boil, then turn off the stove.
Place a tortilla on a plate and add a little bit of the sauce, some cheese, onion and then the chicken. Fold the tortilla and set aside.
Line your Air Fryer Basket or Tray with foil. Place the enchiladas on the foil and drizzle some sauce over them.
Sprinkle with cheese.
Cook them for 15 minutes with the Air Fryer set to 350 degrees. Top with sour cream, green onions and black olives.
This is a great recipe to make using leftovers. I shred leftover chicken breasts from the week and use that if it is already cooked and ready to go.I have used ground beef and ground turkey when I had some extra. It was a great replacement for the chicken.These are great for freezing. Wrap each enchilada in foil or saran and place in a freezer-safe bag. Take one out to reheat for a fun and fast meal!Use corn tortillas if you like. Corn tortillas also are great for meal prep and freezing. It will be less soggy when you go to reheat. Pair enchiladas with refried beans, Mexican rice or other easy side dishes. If you want to make extra or have a smaller air fryer, just make sure to batch cook your enchiladas.
