This super Simple Air Fryer Patty Pan Squash is a favorite fall side dish that is quick to make and tastes so delicious you will wish they were out all year long!
Cut up the patty pan squash into one inch cubes. **Some patty pan squash have seeds, so remove them and cut around them. Cut up the onion in quarters and put in a bowl.
Add the rosemary, thyme and spray olive oil and toss with your hands to fully cover.
Set air fryer to 390 degrees and cook for 10-15 minutes, depending on your air fryer. All air fryers are different so start checking at 10 minutes.

Portion: Given the size of the patty pan squash and using 3 of them to make one batch of air fryer patty pan in our air fryer, this serves 2 people. It is a good portion but not a huge portion. The patty pan are not large to begin with and they kind of shrink up a bit when you cook them so we chose 2 servings for this one. Double the recipe if you would like more or know that the portions will be smaller. Herbs: The rosemary/thyme will give a fabulous earthy, fall flavor but patty pan is just as good with a simple olive oil and salt and pepper-you can never go wrong with it! Simple and tasty every time. Oven Roasting: If you do not have an air fryer, you can easily cook this in the oven as well. Cook at 425 degrees to roast as directed as you would in the air fryer. Then flip half way through cooking for an even cook. Ninja Foodi or Duo Crisp: If you own an Instant Pot Duo Crisp or Ninja Foodi just reach for the air crisping lid, and follow the same directions as the steps above. Substitutions:
Change up the herbs
Toss parmesan cheese on top when it comes out
Use the same recipe and do zucchini or yellow squash
Add in red or yellow peppers in with the mix
Meal Prep: You can meal prep these by cutting up the squash and the onion on Sunday so you can simply toss with olive oil and herbs the day of cooking.Storage: If you have leftovers, store them in a sealed container in the refrigerator and keep for up to five days.
