Make this at home for a delicious and easy copycat recipe. Seasoned chicken and special Taco Bell sauce are piled in a crispy flour tortilla. Dinner never tasted so good.
2 ½cupsCheddar & Monterey Jack Shredded Cheesedivided
3slicesAmerican Cheese
Special Sauce
¼tspGarlic Powder
2tspJalapeño Juice
2tspJalapeñosminced
⅓cupMayonnaise
⅛tspCayenne Pepper
½tspPaprika
¼tspSalt
½tspSugar
½tspCumin
Instructions
Special Sauce
Mix the mayonnaise, jalapeño, jalapeño juice, and spices together in a mixing bowl until sauce is combined.
Prepare the Quesadilla
Lay open one tortilla on a flat surface. Place half a cheese slice on one half of the tortilla. Cover the same side with ½ cup of shredded cheese.
Place 5-6 slices of chicken on top of the cheese.
Spread one tbsp of sauce on opposite side of tortilla.
Fold it closed and cut it in half.
Lightly spray the air fryer basket with oil and place the halved quesadillas in the basket. Lightly spray quesadilla with oil and cook on 370 for three mins, flip and cook for two more minutes.
Repeat steps 2-5 for each tortilla.
Notes
Ninja Foodi and Instant Pot Duo Crisp: If you have a Ninja Foodi or Instant Pot Duo Crisp just reach for your crisping lid and follow the same recipe. You will only be able to probably fit 1 quesadilla at a time. Chicken Choices: This is a great recipe to use leftover chicken in. Pick up a rotisserie chicken or use meal prepped chicken that is in the freezer. Jalapeños: Mild jarred jalapeños are what I used, if you want you can use medium or hot if you care for a bit more heat. Hold Together: If you are worried about your quesadilla coming apart, use a toothpick to stick in to hold it together.
