Lay out the eggroll wrapper. Place one tbsp cheese in the middle of the wrapper. Place 9 quartered pepperonis (or mini pepperonis) on top.
Using some water, wet the four edges of the wrapper to help create the seal.
Fold in the right and left corners of the wrapper just like when wrapping a burrito up and roll the wrapper closed. Add a tad bit of water to help seal it closed.
Place the homemade pizza rolls in the air fryer basket and spray lightly with oil.
Cook on 350 for 4 minutes, flip and cook for 2 minutes more.
Cooking Batches: Cook only about six at a time unless using a tray version AF. Remember to allow room in the AF for the air to circulate. Meal Prep Option: Make the rolls and put in a container or on a tray, covered in the refrigerator for up to one day. When ready to cook, remove from the refrigerator and cook as directed. Since all of the ingredients are chilled at the time of cooking, they will most likely need the full time or even an extra minute. Reheating Leftovers: Set the air fryer to 350 degrees and cook for 2-4 minutes, just to warm up the center as the outside is already cooked. Eggroll Wrappers Tearing: They are best used chilled so don't leave them out exposed to the air. Take one out and cover the remaining until you are ready to roll the next one. If you get interrupted, put them in the refrigerator for 15-20 minutes to make them chilled again. Favorite Variations:
Hawaiian Version: Chopped ham and crushed pineapple (make sure to drain pineapple and just use a little bit as these are small).
Taco Pizza Version: Taco meat, cheese and a tiny bit of salsa instead of the sauce.
Vegetarian Version: Chop up your favorite veggies super small and add sauce and cheese.
Buffalo Chicken Version: Chopped up chicken, sauce, cheese, blue cheese and hot sauce.
Totino's Version: When making Totino's frozen pizza rolls in the air fryer, set the temperature to 380 degrees and cook for 6-8 minutes, turning halfway. Allow 1-2 minutes to cool or the cheese and sauce will spill out and also might burn you.
