215 ozDark Red Kidney Beanscans, drained and rinsed
15ozCannellini Beanscan, drained and rinsed
½cupCut Green Beansfrozen
1cupCellentani Pastadry, or substitute other tubular pasta like elbow macaroni
Juice of One Lemon
Salt and Pepperto taste
Fresh Parsley as Garnishchopped, to taste, optional
Heat a large pot over medium high heat, add 3 tbsp. olive oil. Add onion, celery, carrot and zucchini. Season lightly with salt and pepper. Sauté for about 7 minutes.
Add minced garlic. Sauté for an additional 2 minutes. Add Italian seasoning and red pepper flakes, sauté for one minute.
Add diced tomatoes, tomato sauce, vegetable broth, kidney beans, cannellini beans, green beans and bay leaves. Stir and season to taste with salt and pepper. Bring to a boil, then reduce to medium low heat. Simmer for 1 hour, stirring occasionally.
While soup simmers, cook pasta to al dente in a separate pot. Drain. Transfer to bowl and mix with 1/2 tbsp. olive oil to prevent pasta from sticking together. Set aside.
Remove bay leaves. Add spinach to soup. Cook for five minutes. Then add lemon juice and cooked pasta. Cook for additional two minutes.
Add a bit of water towards the end of cooking if you'd prefer a thinner consistency.Use any of your favorite tubular pasta to have some variety. Cut the vegetables so they are similar in size. It will allow them cook at an even rate. Skip the zucchini and spinach if you aren't interested in them. This soup is very freezer friendly so you can simply put a cup of soup in a freezer safe bag and seal. Lay flat in the freezer for 3-6 months. Defrost in the refrigerator overnight and reheat. Ninja Foodi and Instant Pot Directions | In the pressure cooker you will add in the diced veggies along with the oil and saute for 2-3 minutes. Add in all the ingredients, with a total of 7 cups vegetable broth instead of the 6 in the recipe card. Place lid on the pressure cooker, making sure the valve is set to sealing. Pressure cook on high pressure for 6 minutes on high, with a quick release of pressure. If liquid comes out of valve do a controlled release. Stir and serve.
