These Coconut Flour Oatmeal Cookies are a perfect gluten-free cookie that take only 15 mins to make!

INGREDIENTS

– Butter – Crisco – Regular Sugar – Brown Sugar – Eggs – Vanilla – Salt – Vanilla Extract – Baking Soda – Baking Powder – Coconut Flour – Oatmeal – Shredded Coconut (optional)

STEP 1

Mix the butter & shortening together

STEP 2

Add in the sugar, brown sugar, eggs, & vanilla extract & continue mixing until everything is well-combined

STEP 3

In a separate bowl, mix together the remaining ingredients, then combine to make the cookie batter

STEP 4

Drop the cookies by spoonfuls onto the prepared baking sheet & bake as directed.

STEP 5

Bake for 12 – 15 minutes, or until cookies are golden brown

Remove cookies to a wire rack to cool & enjoy!
