Almond butter is one of my favorite healthy treats, but if you read the back of most store-bought jars, you’ll see unwanted, extra ingredients like sugar and palm oil. I decided to find an easy way to make it myself, and I nailed it with this homemade Vitamix almond butter. Just one ingredient, and under 30 minutes for the cleanest, freshest, and best tasting almond butter!

This recipe uses one simple ingredient! Raw almonds are transformed into an incredible and spreadable almond butter!
As an added bonus, this is and will always be significantly cheaper than buying ready-made almond butter and you control the final texture. I prefer it smooth, but if you like it a bit coarser, just blend less!,

✅ Raw almonds are all you need to make homemade nut butter!
Note: We prefer our almond butter plain, but if you want to sweeten it, feel free to add honey, maple syrup, or another natural sweetener during the last minute of blending.
🍽️ Instructions

👉Step 1: Begin by roasting the almonds. Preheat the oven to 350°F. I prefer to do this on a baking sheet that has been prepared with parchment paper or a non-stick mat.
Roasting adds a bit of a toasted flavor and complements the mild nutty flavor extremely well. Roast them for around 7 minutes on each side, stirring or turning halfway through.
⚠️ Don’t walk away from this, as they can burn fast and easily. Every oven is different so you might need to take your almonds out faster. Keep an eye on them and check more often if needed.

👉Step 2: Once roasted, let them cool for 10 minutes. Pour them into the Vitamix while they’re still warm (but not hot! as that can ruin the Vitamix) and blend until smooth, occasionally, scraping down the sides. Blending them while warm helps the oils release faster. Blend longer for a smoother consistency, or less if you prefer it chunky.

👉Step 3: Transfer the almond butter to small jars and store in the fridge.
TIP: Store the jar upside down in the refrigerator so that the oil that is rising to the top is really settling to the bottom. Grab the jar from the refrigerator and tip it over to open the lid. No excess oil!

🥄 How To Use
🔸The best thing about almond butter is that it can be used in a 1:1 ratio in almost any recipe you would use peanut butter.
🔸This includes spreading on bread for a sandwich, mixing into a smoothie for breakfast, or adding to your favorite cookie recipe. I have repeatedly used it for my coconut flour peanut butter cookies and we love them just as much as the original.
While it doesn’t have as strong a flavor as peanut butter, it is still delicious!

It is just as yummy, but no worries about a peanut allergy!
‼️ Substitutions for Vitamix
If you don’t own a Vitamix yet, there are still a couple of options for you to make this at home.
- Try making it in a food processor using our instructions here. We use a Cuisinart 12 cup like this one that has 1000 watts. The baby version of this won’t have the power to blend up the nuts and will burn up the motor.
- You can also use Blendtec or a Ninja as they have the power to blend the nuts to a consistency needed to make butter.
📌 Expert Tips
⭐Raw almonds are what you need to reach for in this nut butter recipe.
⭐You can skip the roasting and blend the raw almonds if you add a bit of oil. I typically use 1-2 tablespoons of a neutral oil such as avocado oil, per 2 cups of raw almonds.
⭐If you want a bit more sweetness consider adding in a little honey or agave nectar.
⭐Store your jar upside down so the oil stays at the bottom of the jar.
⭐Great to make and gift to loved ones.

For this recipe, I recommend storing it in the refrigerator and using it within 2-4 weeks.
While almonds themselves are typically shelf-stable for a significant period of time, once roasted and blended, the oils in them can easily turn rancid. To be on the safe side, pour it into an airtight container, and plan to use it within one month.
It just takes a few minutes to blend another batch, so there is no need to make a large amount at once.
Serve your nut butter with toast, dip in fruit, waffles, pancakes, stir in soups, etc. There is no wrong way to mix up this butter. It is even a great add-in to a smoothie!

Equipment
- Sheet Pan

Ingredients
- 2 cups Almonds raw
Instructions
- Roast at 350°F for 7 minutes, turn, and roast for an additional 7 minutes.
- Let the almonds cool for 10 minutes. Add the almonds to the high speed blender. while they're still warm. This helps their oils release faster.
- Pulse for one to one and a half minutes or until smooth and creamy.
- Scoop the almond butter into small jars and store in the refrigerator.
