🥘 Ingredients

Raw almonds are all you need to make homemade nut butter!

🍽️ Instructions

Simple Instructions with Just One Ingredient

Step One: Begin by roasting the almonds.  I prefer to do this on a baking sheet that has been prepared with parchment paper or a non-stick mat.

Roasting adds a bit of a toasted flavor and complements the mild nutty flavor extremely well. Roast them for around seven minutes on each side, stirring or turning halfway through the cooking time. 

⚠️ Don’t walk away from this, as they can burn fast and easily.

Step Two: Once roasted and cooled, pour them into the Vitamix and blend until smooth!

You can roast them one day and store them in an airtight container until you are ready to blend.

TIP: Store the jar upside down in the refrigerator so that the oil that is rising to the top is really settling to the bottom. Grab the jar from the refrigerator and tip it over to open the lid. No excess oil! 

🥄 How To Use 

The best thing about almond butter is that it can be used in 1:1 ratio in almost any recipe you would use peanut butter. 

This includes spreading on bread for a sandwich, mixing into a smoothie for breakfast, or adding to your favorite cookie recipe.

While it doesn’t have as strong a flavor as peanut butter, it is still delicious!

Another favorite is to add into oatmeal to replace peanut butter in this Peanut Butter Overnight Oats recipe. 

It is just as yummy, but no worries about a peanut allergy!  For lunch, you could use it in my Freezer PB&J Sandwiches!

‼️ Substitutions for Vitamix 

If you don’t own a Vitamix yet, there are still a couple of options for you to make this at home. 

  • Try making it in a food processor using our instructions here. We use a Cuisinart 12 cup like this one that has 1000 watts. The baby version of this won’t have the power to blend up the nuts and will burn up the motor. 
  • You can also use Blendtec or a Ninja as they have the power to blend the nuts to a consistency needed to make butter. 

📌 Expert Tips

  • Raw almonds are what you need to reach for in this nut butter recipe.
  • If you want a bit more sweetness consider adding in a little honey or agave nectar.
  • Store your jar upside down so the oil stays at the bottom of the jar.
  • Great to make and gift to loved ones.

How long does homemade almond butter stay fresh?

For this recipe, I recommend storing it in the refrigerator and use within three months. 

While almonds themselves are typically shelf-stable for a significant period of time, once roasted and blended, the oils in them can easily turn rancid.  To be on the safe side, pour it into an airtight container, and plan to use it within a few months. 

It just takes a few minutes to blend another batch, so there is no need to make a large amount at once.

What are the nutrition benefits of almond butter? 

Almond butter is great to add to your diet for natural antioxidants and to help aid in lowering your cholesterol. 

It is loaded with protein, magnesium, and potassium which aid in healthy heart function and overall good health.  

Is almond butter good for you?

Yes!  It is a great addition to your diet.  Being simple to make and full of nutrients your body needs, a spoon of this is an excellent choice for a fast and healthy fat and protein option. 

As with any food, moderation is the key to good health.  A tablespoon is great. A cup full…not so much. Use common sense and add to your diet as needed, but don’t overdo it!

What tastes good with almond butter?

Serve your nut butter with toast, dip in fruit, waffles, pancakes, stir in soups, etc. There is no wrong way to mix up this butter. It is even a great add-in to a smoothie!

Homemade Almond Butter in a Vitamix

Use your high speed blender to quickly make this healthy nut butter as an all-natural alternative to store bought peanut butters.

Equipment

  • Sheet Pan

Ingredients

  • 2 cups Almonds raw

Instructions

  • Roast at 350 degrees for 7 minutes, turn and and additional 7 minutes.
  • Add roasted and cooled almonds to the high speed blender.
  • Pulse for one to one and a half minutes until smooth and creamy.
  • Scoop the Almond Butter into small jars and store in the refigerator.

Notes

Reach for raw almonds for this recipe. Make sure the packaging says RAW on it. 
Alternatives to Vitamix: If you do not own a Vitamix you can use another type of higher-powered blender to do the job. A Ninja Blender is a great option. 
Storage: Store your almond butter upside down in a jar. The oil will go to the bottom of the jar. When you flip the jar to open you have perfect almond butter with no oil on top. Store your homemade nut butter in the refrigerator. Use within three months.  
Additional Sweetness: If you want to add in some sweetness mix in some honey or agave nectar to taste. We don’t need it but this is an option for you. 
For this recipe, I recommend storing it in the refrigerator and use within three months.
