Finding a low-carb snack that my whole family gets excited about seems to be a recurring challenge for me. These 3-ingredient keto pizza rolls are one of my latest wins and they’re ready in under 10 minutes. The first time I learned you can make a delicious pizza dough replacement just out of cheese, my mind was blown!

I think of this recipe as the perfect blank canvas for all our favorite pizza toppings. While we love these keto pizza rolls with classic pepperoni, they are so easy to customize. It’s fun to make different versions with olives, mushrooms, or whatever pizza toppings our family is in the mood for.
This is “THE” after-school snack you’ll want to keep on hand, especially if you have growing and active teens. This is also a great one to teach your college-aged kids to make, so they can enjoy it in the dorm kitchens. It beats buying high-priced snacks all the time to share with friends.
🍕 Ingredients
If you aren’t drooling after looking at these pizza rolls, I will be shocked. You don’t even have to eat low carb to enjoy all the flavors and textures they offer. Let’s break down the ingredients really quick:

✅Mozzarella – The star of the show is the mozzarella cheese. Use slices of a good quality mozzarella for the best results and flavor. Ask for them at the cheese counter in your grocery store.
✅Pepperoni – I’m pretty much starving thinking about biting into this pepperoni. Yummy! You only need 12 slices, and you’ll be in food heaven.
✅Keto Marinara Sauce – The marinara sauce is completely optional. We love to dip our pizza rolls into the warm sauce. You can make it at home or buy it. Either way works, but if you use the store-bought kind, make sure it’ is’s low-carb.
🍽️ Instructions
👉Step 1: Start by preheating your oven to 400 degrees. Then, line a cookie sheet with a Silpat or parchment paper.
Note: Find pre cut parchment paper that fits the sheet pan. This has been the biggest timesaver for me. It only costs a few cents, but makes cleanup a snap! 😍

👉Step 2: Lay the sliced cheese on the sheet pan liner, add a couple slices of pepperoni, and pop them in the oven for 6 minutes. No, these don’t take a lot of time – so be sure to watch your kitchen timer! If the cheese has turned brown around the edges, remove them from the oven.

👉Step 3: While your pizza rolls are cooling, sprinkle Italian seasoning on them and roll them up.
👉Step 4: Let them cool to a comfortable temperature to eat. Serve with your favorite keto-friendly dipping sauce.

🍲 Expert Tips and Tricks
🔸Always add a liner to your cookie sheet. Whether you use a baking mat or parchment paper, it will make cleanup a breeze!
🔸Trust your oven to get the perfect cooking time. You know if your oven cooks a little faster or a little slower. Look for the cheese to melt and turn a little brown. That is your sign that they are ready to leave the oven.
🔸The secret to the perfect roll. This is the most important part! You have to let the cheese cool for just a minute or two after it comes out of the oven. It needs to be cool enough to handle, but still very warm and pliable. I find using a small spatula to help lift the edge and start the roll is the easiest way to do it without burning your fingers. If it cracks, it has cooled too much; if it’s too gooey to lift, give it another 30 seconds on the pan.
🔸Making these for a party or friends coming over? Most will eat between 2-4 pizza rolls. Count the number of people who are coming and then make as many batches as you need for the number of people you are expecting.
🍴 Additions and Substitutions

📌The first thing I would want to do to change it up a bit is to drizzle the olive oil/herb spread that is used in my portobello mushroom pizza recipe. That is really going to jazz up the flavor quite a bit for minimal effort.
📌Another idea is to put ham on top of it instead of pepperoni.
📌Try adding a few leaves of spinach or basil instead of the meat. This is a great way to make this vegetarian.
📌Grab a jar of keto-friendly sauce and spread a 1/2 tsp on the cheese slice. Or make the easy homemade marinara sauce we served with some delicious air fryer ravioli. Just replace the brown sugar with a low-carb sweetener or skip it altogether.
🍽️ Meal Prep Tips
We believe that there are always ways to meal prep. Even saving just a few minutes will add up! For this recipe, it is all about the preparation.
🔹Stack the cheese in a baggie in the fridge the night before and lay out the other ingredients.
🔹Line a cookie sheet with a baking mat or parchment paper.
🔹When you are ready to cook, just grab everything that is already staged, pop it in the oven and eat!

I like the marinara sauce! It really makes this taste like a low-carb pizza. Swap it out for a blue cheese or ranch dressing, but make sure that they are keto-friendly.
Yes, they freeze wonderfully, which is why I love making a big batch! Let the pizza rolls cool completely, then place them on a baking sheet in the freezer for about an hour. Once they’re solid, you can toss them all into a freezer bag for later. To reheat, just pop them in the air fryer or oven at 375°F for a few minutes until they’re hot and crispy again.

Equipment
- Baking Sheet
- Parchment Paper
Ingredients
- 12 slices Mozzarella
- 12 Pepperoni Slices
- Italian Seasoning
- Keto Marinara Sauce optional
Instructions
- Preheat oven to 400 degrees.
- Line a cookie sheet with a baking mat or parchment paper.
- Lay the sliced cheese on baking mat and add a few slices of pepperoni. Place it in the oven for six minutes or until cheese slices start to slightly brown around the edges.
- Remove from the oven.
- While the slices are cooling sprinkle them with Italian seasoning. These can be eaten flat or rolled up in a tube and ready to dip in sauce.
- Serve with Keto Marinara Sauce

Tasted great but my cheese stuck to the parchment paper and I had to scrape it into a ball to get it off. What did I do wrong? I’ll give it another go one day.
Hi Carol! Let’s see if we can help you out! Did you use parchment paper or waxed paper? Freezer paper won’t work either. It needs the non stick properties of the parchment to allow it to lift off. Parchment should allow it to easily lift right off. Wax paper will not. You can always allow it to cool for a couple minutes before rolling them up and they should start to separate from the edges on the paper. Can you check the box of paper you used and let me know? This was fast and easy to make from start to finish and it’s really good as well I used ham and havarti cheese it’s very delicious my husband had a sandwich and I had the pizza rolls but the pizza rolls smelled so good my husband had some pizza rolls and a sandwich good thing I made extra lol 😂😂
